Wilted Spinach with Garlic
A delicious side dish from chef and food stylist Kristin Goltra.
3 bunches fresh spinach
3 Tbsp. olive oil
3 garlic cloves, minced
Coarse salt
Freshly ground black pepper
Thoroughly wash spinach in cold water to remove all grit. Remove thick stems. In a large lidded pot add inch of water and spinach leaves. Cover and steam until wilted, approximately 3-5 minutes. Remove the spinach and squeeze out all remaining water. Heat olive oil in a skillet, add garlic and sauti gently. Add cooked spinach and toss with garlic oil. Season with salt and pepper (if necessary). Serve immediately or gently reheat at serving time.
