Apple Straws and Goat Cheese Salad
A delicious recipe from chef and food stylist Kristin Goltra.
For the salad:3 large crisp apples: 1 red, 1 green, 1 yellow
Juice of 1 fresh lemon
4-6 oz. goat cheese
2 bags mesclun lettuce mix
For the dressing:3/4 cup extra virgin olive oil
1/4 cup rice wine vinegar
1 tsp. dijon mustard
1 tsp. dried tarragon
Coarse salt
1/4 tsp. cayenne pepper
Rinse and spin dry the salad mix. Refrigerate to keep crisp. Julienne apples, leaving skin on. Place apples in a small bowl and cover with water and lemon juice. Refrigerate. For the salad dressing, whisk all the ingredients together in a mixing bowl or food processor until the oil is completely incorporated. Arrange on individual chilled plates, a mound of greens, a fan of apple straws and a 1-oz. dollop of goat cheese. Drizzle lightly with dressing.
