Honey and Vanilla Poached Winter Fruit
A delicious dessert recipe from chef Janine MacLachlan
2 cups water
1 cup honey
2 tablespoons pure vanilla extract
1 tablespoon lemon juice
1/8 teaspoon salt
2 cups dried apricots, halved
1 cup dried mission figs, halved
1 cup pitted dried plums, halved
2 ripe pears, cored and cut into 1/2 in cubes
zest of one lemon
Heat water and honey in large saucepan over medium-high flame until honey dissolves. Stir in vanilla, lemon juice and salt. Add apricots, figs, prunes and pears and simmer until fruit becomes plump, about 15 minutes. Remove fruit with a slotted spoon and set aside. Bring mixture to a boil and reduce by half, about 15 minutes. Mixture should be thick and syrupy.
