Apple Pie à la Mode
A delicious delight from chef Marilyn Harris.
1 cup sugar
1 stick butter
2 Tbsp. flour
4 large yellow delicious apples
Double pastry for a 9-inch pie pan
Vanilla ice cream
Roll out half of the pastry and place it in the pan.
Core and peel the apples. Slice into thin slices. Put into a bowl and toss with the flour and all but 1 Tbsp. of the sugar. Pile into the pie crust. Dot with 6 Tbsp. of the butter.
Cover with the top crust and crimp the two crusts together around the edge. Cut several decorative slits in the top crust. Sprinkle with a tablespoon of sugar and dot with the remaining 2 Tbsp. of butter that is cut into very small pieces.
Place in the bottom one-third of a preheated 350 degree F oven and bake for 45 to 50 minutes or until golden brown. Serve warm topped with vanilla ice cream.
