Chocolate Chip Oatmeal Cookies
A delicious delight from chef Marilyn Harris.
2 sticks unsalted butter, softened
1 cup light brown sugar, firmly packed
1 cup granulated sugar
1 tsp. vanilla
2 large eggs
1-1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. ground ginger
2-1/2 cups oatmeal
2 cups semisweet chocolate chips
1 cup chopped pecans or walnuts
In the electric mixer beat together the butter, sugars and vanilla. Beat in the eggs until mixture is light and fluffy. Sift together the flour, baking soda, salt, allspice and ginger. Mix into the butter mixture along with the oatmeal. Stir in the chocolate chips and nuts. Drop with a teaspoon onto greased baking sheets. Bake for 12 to 15 minutes in a preheated 375°F oven. Remove and allow to stand for 1 minute before removing cookies to a cooling rack.
Makes about 4 dozen
