Millstone® Almond Java Jumbles
Great with an afternoon cup of your favorite Millstone® coffee!
1-1/4 cups sifted all-purpose flour
1/2 cup very finely chopped blanched almonds
3 tbsp. sugar
1/2 cup butter, softened
1 tsp. almond extract
2 tbsp. Millstone® French Roast brewed double-strength
2 tbsp. sugar
Egg white, slightly beaten
Preheat oven to 350°F. Measure flour and set aside. Combine almonds and 3 tbsp. sugar and set aside. Cream together butter, almond extract, and coffee then add 2 tbsp. sugar gradually, creaming until fluffy. Add flour in thirds, blending in after each third. Chill.
When ready to bake, cut off small pieces of chilled dough and roll to resemble fingers about 1/4-inch thick and 2 1/2 inches long. Brush cookies with egg white and roll fingers in almond mixture. Carefully place onto baking sheets and bake 10-12 minutes, until golden yellow. Carefully remove cookies with spatula and place on cooling racks.
