Blending coffees is like the art of cooking — blending and cooking the right combination of ingredients to produce a delectable dish.

Blending is the art of combining two or more coffees to create a balanced cup. There is some debate about when is best to blend beans in the coffee production process, but it can actually be done either before or after roasting, depending on how the master roaster chooses to use the characteristics of the individual coffees to create the desired final cup.
The master roaster, who is knowledgeable about each type of bean, knows what flavors are compatible with one another. For example, the roaster may take a highly acidic coffee bean and combine it with one that is mellow, heavy bodied and nutty to create a balanced cup.
