To roast premium coffee, to deliver precise flavor time and time again, requires more than technology and machines. It also requires instinct and experience. Each roaster has the art of roasting down to a science—they know when a delicious, quality coffee is complete. Their watchful guidance and insistence for precise timing affects the coffee's quality and consistency.

Timing Is Everything

During roasting, the composition of the bean changes. It swells to twice its size, turns brown, and begins to secrete essential coffee oil. Our roast masters know precisely when to crack a coffee bean: once for light or medium roasts, and twice for the more full-bodied dark roasts such as espresso beans. When a coffee bean reaches its peak for a specific roast, our roast master quickly cools it with a touch of moisture at the perfect moment. This seals in the flavor to lock in the Millstone® quality.
